Making the haddock and cod minced block:
The mincing method resembles the extraction of honey from honey combs with a centrifuge - pieces of first-grade fillet are placed inside the centrifuge and screened through a special fine sieve, which removes any fish bones and skin. The resulting mass then fills the special moulds and is deep frozen for 1.5-2 hours at between -40° and -45°С. The frozen minced fillet is cut into blocks of 450g each.

Haddock and cod are fished by using the long line method: each fish is taken onboard individually, which makes each fillet free from blood that results from squeezing fish by trawling, and the meat fibres are preserved intact. Each fillet is quick-deep frozen at between -40°C and -45°С, which helps to preserve its succulence.

Keep it frozen in a freezer at -18°С or below.
Shelf life in a freezer: 24 months after the manufacture date.
We recommend that the defrosted product be kept no longer than 48 hours in a polybag on ice at between +4 and +6°С.
Do not refreeze the product!
We recommend that the product be defrosted in cold water (at about 15°С) for no longer than 1-2 hours in a polybag.
To preserve the freshness and flavour of fresh Icelandic haddock and cod, immediately after defrosting take the minced fillet out of the bag and cook without delay.
NB: When cooking fish also be sure to use the thawed fish ‘juice’ as it contains proteins which are vital for our health
